Bill Waugh, founder of Denver’s Casa Bonita Mexican restaurant and other eateries across the Southwest, died at age 79 on Tuesday.
Casa Bonita, founded in Oklahoma City in 1968 and expanded to locations in Texas, Colorado and Arkansas, opened at its current location on March 27, 1974. What was once a JC Penny’s in the JCRS shopping center at 6715 West Colfax Avenue in the Denver suburb of Lakewood, Colorado became a family institution to visitors and locals alike. Inside, Mexico comes to life in the 52,000 square foot restaurant that has seating for 1,000 guests and includes a theater, mines, caves and a 30 foot cliff diving show. Unequalled to say the least.
